2 x 185g cans Sealord Tuna Sensations with Olive Oil or Lemon Pepper Flavour 150g salad greens 100g fresh green beans, blanched and refreshed 300g baby potatoes, halved and steamed 4 tomatoes, cut into wedges 1/3 telegraph cucumber, thinly sliced 3 hard-boiled eggs quartered 6 anchovies 1/2 cup pitted olives 100g Feta with sundried tomato and olive Lemon juice dressing: Juice of 2 lemons 1/3 cup extra virgin olive oil Salt and pepper

Drain the tuna. Place salad greens on a platter, combine all the salad ingredients together except for the tuna, eggs and anchovies. Make the dressing by whisking lemon juice and oil together and seasoning with salt and pepper.
Drizzle the dressing over the mix, lightly toss through (reserving some dressing for tuna). Place mix on salad greens. Top salad with tuna, drizzle remaining dressing. Season. Finish off platter with eggs and anchovies. Serve.
